We were gifted again :)


Our neighbor and friend brought us "some" cottage cheese :) She also shared gallons of whipping creme and half and half with us. She drives a tractor trailer and this was extra...thank you for remembering us. Also for the past 2 Saturdays another neighbor brought us bread ( 30 loaves of french bread), croisants, lots of dessert and many other items...We feel very loved . I used lots of the french bread in one nite when we made french bread pizza and each kid could have at least one half of a loaf or more .

Does anyone have some recipes using cottage cheese, or whipping creme ? I have 3 but can use more :) We add cottage cheese to ramen noodle soup. I make a Hungarian noodle called Tasta with egg noodles, butter, salt and pepper, parmesan cheese and cottage cheese. Then I just recently came across this recipe that Helen another friend of ours makes. She and Dick take 5 or 6 kids every week and love on them and she always cooks dinner for them... The kids always come home raving about the cottage cheese "salad" that Helen makes...It is about 3 containers of this size cottage cheese, a lg. jello dry, cans of fruit, 1 lg. whip cream, a bag of small marshmellows. So I guess for awhile we will be eating lots of these unless you all can share some other yummy recipes with me.

That's a lot of cottage cheese! Sounds like some pretty interesting recipes. My hubby will eat pretty much anything accept for you guessed it-- cottage cheese. I think he would cry!

there is a german recipe called verinics it is cottage cheese and sautéed onions wrapped in a dough then boiled. its very good served with sour cream and or butter however its a lot of work

Thank you all for some good ideas or leads...We do eat losts of cottage cheese- even plain but I will try some of these. It is very high protein and so I have always had even for my babies to eat....

Christine- funny you either love it or not. My son in law, Keith can't eat it either and he is not picky.

Cottage cheese is real tasty spread on bread, sprinkled with some cinnamon and a little sugar on top and put it under the broiler to get it toasty.

It is also an excellent substitute for ricotta so cottage cheese is great to make lasagna with.

I use cottage cheese in place of ricota in lasagna recipes. It would be a good time to freeze some ahead.

You can use it in lasagna (of course) or sometimes we mix it in on spaghetti nights with mozarella on top. Delicious!

One favorite of mine is to mix it with one large can of mandarine oranges and one large can of pineapple as a salad! It is delicious!

EASY LAZAGNA

Ingredients

1 1/2 pounds ground beef
1 (30 ounce) jar marinara sauce
3/4 cup water
1 teaspoon salt
12 lasagna noodles
1 (16 ounce) package cottage cheese
12 ounces grated mozzarella cheese
1/2 cup grated Parmesan cheese
Directions

Cook the ground beef in a large saucepan over medium-high heat until browned and no longer pink, about 5 minutes; drain fat. Stir in the marinara sauce, water, and salt. Bring to a boil. Remove sauce from heat.
Arrange 6 noodles in a 9x13-inch baking dish, breaking if necessary to fit. Spoon 1/2 of the sauce over noodles. Top with 1/2 of the cottage cheese and 1/2 of the mozzarella cheese. Repeat layers with remaining noodles, sauce, cottage cheese, and mozzarella cheese. Top with Parmesan cheese. Cover tightly with foil; refrigerate overnight.
Preheat an oven to 350 degrees F (175 degrees C).
Bake lasagna, covered, until noodles are soft, cheese is melted, and sauce is bubbly, about 1 hour. Allow to sit for 10 minutes before serving.

You will need to do some multiplication for your crew!!!

I second that lasagne recipe, but I put noodles over the beef and sauce. So it goes noodles, eebeef, noodles, cottage cheese, mozzarella, noodles, beef etc. It makes a less sloppy serving. Also, if you wipe the dish with a little olive oil before you put the first noodles in, they are less likely to stick and that makes it easier to serve too.

I was going to say lasagna, but several people beat me to the punch so I went to allrecipes.com and searched for recipes by ingredient (cottage cheese) and several came up. They have a couple of breakfast casseroles, enchilada, baked ziti, quiche, stuffed shells, pancakes, cheesecake, several geletin salads....I would suggest you go there and look online. I love this site as you can plug in a few ingredients and it gives you suggestions to use it.
